Homemade Spaghetti Bolognese (Rich, Comforting, & Foolproof)
There’s nothing quite like a steaming bowl of homemade Spaghetti Bolognese to turn any weeknight into a cosy occasion. While every Italian nonna has her secret ratio, this recipe strikes the perfect balance between a deeply flavorful, long-simmered sauce and a practical meal you can pull off at home.
Grab your wooden spoon, open a bottle of red, and let’s get cooking!
The Secret to a Rich Bolognese
Before we jump to the ingredients, here are three simple tricks that elevate a basic meat sauce into a restaurant-quality Bolognese:
- The Soffritto: The holy trinity of finely diced onion, carrot, and celery forms the aromatic flavour base of the sauce. Don’t skip it!
- Whole Milk: Adding a splash of milk tenderises the ground meat and cuts through the tomatoes’ acidity, creating a silky texture.
- Patience: Let it simmer. While 30 minutes works in a pinch, letting the sauce bubble away gently for 1 to 2 hours unlocks incredible depth of flavour.
Ingredients
Prep time: 15 mins | Cook time: 1 hour 15 mins | Servings: 4–6
For the Sauce:
- 1 tbsp Olive oil (or butter)
- 1 large Yellow onion, finely diced
- 1 medium Carrot, finely diced
- 1 stalk Celery, finely diced
- 3 cloves Garlic, minced
- 500g (1 lb) Ground beef (80/20 lean-to-fat ratio works best)
- 250g (1/2 lb) Ground pork (or pancetta/bacon for extra richness)
- 2 tbsp Tomato paste
- ½ cup (120ml) Dry red wine (e.g., Chianti or Cabernet Sauvignon)
- ½ cup (120ml) Whole milk
- 1 can (400g / 14 oz) Crushed tomatoes or Passata
- 1 cup (240ml) Beef stock
- 1 tsp Dried oregano
- 1 Bay leaf
- Salt and freshly ground black pepper, to taste
To Serve:
- 400g–500g Spaghetti (or Tagliatelle)
- Freshly grated Parmesan cheese (Parmigiano-Reggiano)
- Fresh basil leaves for garnish
Step-by-Step Instructions
Step 1: Build the Flavour Base (Soffritto)
Heat the olive oil over medium heat in a large heavy-bottomed pot or Dutch oven. Add the diced onion, carrot, and celery. Cook gently for 8–10 minutes until soft and translucent (not browned). Add the garlic and cook for another minute until fragrant.
Step 2: Brown the Meat
Turn the heat up slightly and add the ground beef and ground pork. Use your wooden spoon to break up the meat into small pieces. Cook for 6–8 minutes until browned all the way through. Drain off any excess fat if necessary, but leave a bit for flavour!
Step 3: Layer the Liquids
- Stir in the tomato paste and cook for 2 minutes to caramelise it slightly.
- Pour in the red wine to deglaze the pot, scraping up any delicious browned bits stuck to the bottom. Let it simmer until reduced by half (about 3–4 minutes).
- Stir in the milk and let it simmer for 2–3 minutes until absorbed by the meat.
Step 4: Simmer to Perfection
Add the crushed tomatoes, beef stock, dried oregano, and bay leaf. Season with a generous pinch of salt and black pepper. Bring to a boil, then reduce the heat to low, cover partially with a lid, and let it simmer gently for at least 45 minutes to 1.5 hours, stirring occasionally. (If the sauce looks too thick, splash in a little extra stock or water).
Step 5: Cook the Pasta
10 minutes before your sauce is ready, bring a large pot of heavily salted water to a boil. Cook your spaghetti until al dente (usually 1–2 minutes less than the package instructions). Reserve ½ cup of the starchy pasta cooking water before draining!
Step 6: Bring It All Together
Discard the bay leaf from your sauce. Add the drained spaghetti directly into the sauce pot along with a splash of reserved pasta water. Toss vigorously for 1–2 minutes over low heat—this coats every strand of pasta in that glossy, savoury sauce.
How to Serve
Divide the pasta into warm bowls and top generously with fresh Parmesan cheese and a tear of fresh basil. Pair it with a crisp green salad, some warm garlic bread, and the rest of that red wine!
